A pressed and uncooked semi-hard cheese made from pasteurised sheep’s milk.

Tasting Notes:
Supple, with a natural rind, this cheese has a tangy flavour and nutty, herbal aroma.

Serving Suggestions:
This cheese will shine as a cheeseboard centrepiece. It’s great on its own, or grated over salads to add a little roundness. To match the complex flavours and slightly salty zest of this cheese, pair it with a white dessert wine for an after dinner treat.

History of the cheese:
Based in the small village of Macaye at the foot of the Pyrénées Mountains, the Onetik dairy has been making authentic cheeses for over 30 years, using the traditional methods handed down by their ancestors. Their Brebis Ossau Iraty is made exclusively with milk from local breeds of sheep and proudly bears the ‘Protected Designation of Origin’ label. It has a succulent and complex flavour, developing notes of hazelnut and caramel as it matures. The appearance of subtle mould spots on the rind are normal – simply brush them off before enjoying.
