Our cheese of the week is a Pecorino Romano D.O.P, one of Italy’s oldest cheeses. A hard, sheep’s milk cheese with origins stretching back to ancient Rome, D.O.P translates to ‘Protected Designation of Origin’, meaning this cheese is unique to the Italian regions of Lazio and Sardinia.
Sharp and slightly spicy, this Italian favourite has a distinctively hard and crumbly texture with a rich and salty flavour profile.
Its dense, salty nature makes Pecorino Romano perfect for grating over pasta and grilled vegetables. Classic Roman dishes, like the cheese and pepper pasta Cacio e Pepe, make wonderful use of this tangy cheese, or try pairing it with fruits and jam to accentuate the sharp flavour.
About the cheese:
Made exclusively with fresh whole sheep’s milk from Lazio and Sardinia, the Pecorino Romano name is recognised and protected by European law. Once a staple in the diets of ancient Roman legionaries, it has a shorter aging process and tangier flavour than the cow’s milk cheese Parmigiano-Reggiano, to which it’s often compared.
