The summer season’s abundance is glorious to have on hand for incredible salads that can even outshine your main dish! We wanted to share some of our secrets for the perfect salad.
Dress for success
The summer season calls for a variety of perfect summertime dressings to grace your leaves and we find sometimes the simplest are the best.
It all starts with the classic vinaigrette.
Whisk 2 teaspoons of red wine vinegar with 2 teaspoons of Dijon mustard, ½ teaspoon of salt and a good grind of black pepper before whisking in 1/3 to ½ cup of your favourite extra virgin olive oil.
To this base you can add anything!
• Try replacing the red wine vinegar with white wine vinegar, cider vinegar or infused vinegars such as shallot or tarragon
• Roasted garlic is a delicious addition and the new season garlic is much milder and not so garlicky on the breath.
• Fresh herbs, and plenty of them.
• A teaspoon or two of Mandy’s Horseradish creates a fine mild heat.
• Crumble in feta or blue cheese.
• Roasted, peeled red capsicums can be blitzed in your food processor with the base to make a sweet and delicious orange dressing that is great with grilled fish.

Sensational Salad Accompaniments
You can also add delicious accompaniments, that add some crunch and texture and some added panache to your salad.
These are some of our favourite right now:
Coconut chips – Green Seeds coconut chips have an incredible nutty flavour, and don’t overlook their flavoured options for extra flavour in your evening salad. Smokin’ BBQ tastes a lot like bacon and Raspberry and Beet’s natural sweetness is quite a treat when matched with bitter leaves. We also love Natural Abundance Yellow Thai Curry coconut chips. Pumpkin seeds – whether you toast your own or use Tio Pablo’s Pepitas with a touch of spice and lime, these crunchy and woody-tasting seeds are so good for you and work super-well with avocado, grilled meats and fish or just as an added crunch in your rocket salad.
Flavoured toasted bread crumbs – known as pangritata, toasted breadcrumbs can be infused with all sorts of flavours – from the common, such as garlic, to the exciting, such as fennel seed or fennel pollen!
Seaweed Snacks - those salty, roasted seaweed sheets are incredible crushed and added at the last minute to a noodle salad with sesame seeds. We also love the pre-toasted Japanese sesame seeds we have in our spice section – all the work is done for us!
Fruit – We love fruit in our salads. All that extra sweetness can really be amazing in combination with the smoke and fire of the BBQ. So be bold.
