Such a delicious, easy, mid-week meal option to serve with roasted vegetables or a salad, baked ricotta is light, creamy and a perfect vehicle for other flavours.
Preheat oven to 200°C. Grease one dish well with olive oil.
In a large mixing bowl, combine the ricotta, egg, parmesan, sage, salt and pepper. Spoon into the greased bowl and place in the preheated oven to bake for 25-30 mins or until golden brown and set.
On removal from the oven, drizzle with extra virgin olive oil and serve hot with toasted bread or crackers.
500 grams fresh ricotta
1 egg, lightly beaten
1⁄4 cup Grana Padano parmesan, freshly grated
Handful fresh sage, chopped
Salt and pepper to taste
