A simple and light batter is best to showcase the whitebait themselves so don’t get fancy and complicate things
1 free range egg
1½ tsp cornflour
½ tsp baking powder
¼ – ½ tsp salt
Freshly cracked black pepper
1 cup whitebait
1 lemon cut into wedges to serve
Whisk together egg, cornflour, baking powder salt and pepper. Add whitebait and mix gently
Coat a frying pan with butter and ladle in a spoonful of batter
Flip the fritter when it is beginning to brown being careful not to overcook it as it will become tough
Squeeze a little lemon juice on the fritter while it is still hot in the pan and serve with more lemon slices
