BEEF KOFTA WITH WHITE BEAN SALAD AND TAHINI DRESSING

These spice-packed beef kofta on a tasty bed of beans couldn’t be easier to make.

Ingredients

For the tahini sauce:

½ cup tahini

1 clove garlic

juice and zest 1 lemon

½ cup water

For the white bean salad:

1 red onion, halved and thinly sliced

1 tablespoon red wine vinegar

½ cup coriander, roughly chopped

1 teaspoon Farro sumac

2 tins white cannellini beans, drained and rinsed

2 tablespoons extra virgin olive oil

For the beef kofta:

1 small onion, roughly chopped

2 cloves garlic, chopped

1 cup coriander, chopped

¼ teaspoon Farro ground allspice

¼ teaspoon Farro ground cloves

¼ teaspoon Farro dried mint

½ teaspoon Farro ground cumin

1 tablespoon tomato paste

1 teaspoon sea salt

500g beef mince

1 egg white

Method

For the tahini sauce:

Blitz all the ingredients together in a blender to make a smooth paste, thinning if necessary with extra water

For the white bean salad:

In a bowl, sprinkle onion with some sea salt and the red wine vinegar and allow to soften for at least 15 mins. When ready to serve, add the remaining ingredients, and season to taste

For the beef kofta:

In a food processor, blitz the onion, garlic and coriander. Add the spices, tomato paste, salt and beef mince. Pulse to combine, then add the egg white and pulse again. Shape into meatballs or oval shapes

Ideally, refrigerate for 30 mins before cooking to allow the meat to set. Fry or grill for 4-5 mins on each side and serve with the salad, and tahini sauce
