BRISKET SLIDERS WITH SCAMORZA AND PICKLES

Sliders are brilliant for a quick meal or snack. Dainty sized but big on flavour, we love them with our  Braised Beef Brisket , easy-melting scamorza cheese and your favourite pickles.

Ingredients

1 packet sliders

200-300g  Cooked Beef Brisket , sliced or shredded

½ cup beef stock from the base  Brisket  recipe

2 Tbsp BBQ sauce

1  scamorza cheese , cut into slices

 Bread and butter pickles , to serve

Method

Preheat the oven to 160°C.

Put the sliders into the oven to warm through, approx. 6-8 minutes, then cut in half horizontally.

Meanwhile, heat the beef in a pan along with the stock and BBQ sauce until hot. Put a spoonful onto the base of each slider and top with the scamorza. Return to the oven for a minute to just melt the cheese.

Remove from the oven and top with the pickles. Put on the slider top, skewer with a toothpick, and serve immediately.
