A must for any Feijoa lover and so easy! I first tried this when I was about 18 at Le Brie in Auckland and it’s been a family favourite ever since.
4-5 feijoas per person, half and scoop out flesh, reserve in a bowl, discard skins
1 cup caster sugar
1/4 cup water
To serve:
Kohu Road vanilla ice cream
Place water and sugar in a pot that is large enough to hold all the fruit. Place on the stove and gently bring to a simmer. Continue to simmer until it just starts to turn golden and caramelise. It should take about 5-10 minutes. Be careful not to burn the sugar mix as it starts to caramelise
As soon as it starts to go golden, pour in all the fruit a once. It will bubble and may spit a little. Then continue to stir for another 30 seconds
Place a scoop of ice cream in each bowl. Divide the hot fruit out into each bowl and serve immediately
