Diced fish marinated in zesty lime juice, cherry tomatoes, avocado, chilli and coriander - light, refreshing, full of flavour and always quickly devoured at a party. Incredibly easy to prepare and can be made in advance, which makes it perfect for entertaining.
400g white fish fillets, de-boned and cut into bite-sized pieces
1/4 cup fresh lime juice
1/4 cup coconut cream
1/2 small red onion, finely sliced
8 cherry tomatoes, halved
1 green chilli, seeds removed and finely sliced
1/4 cup fresh coriander, roughly chopped
1/2 avocado, cubed
sea salt and ground black pepper to taste
a few shakes of Tabasco sauce (optional)
drizzle of extra virgin olive oil
extra lime wedges and good quality corn chips to serve
Place fish and lime juice in a bowl and stir to combine.
Cover and chill for about half an hour or until the fish turns an opaque white colour.
Drain off most of the juice, transfer to a serving bowl and stir through remaining ingredients.
Drizzle over a little extra virgin olive oil and serve
