Diced fish marinated in zesty lime juice, cherry tomatoes, avocado, chilli and coriander - light, refreshing, full of flavour and always quickly devoured at a party. Incredibly easy to prepare and can be made in advance, which makes it perfect for entertaining.
Place fish and lime juice in a bowl and stir to combine. Cover and chill for about half an hour or until the fish turns an opaque white colour. Drain off most of the juice, transfer to a serving bowl and stir through remaining ingredients. Drizzle over a little extra virgin olive oil and serve.
