Chicken with Tomato Salsa, Bulgar and Green Beans
A fresh chicken dish on bulgar with a vibrant salsa and a side of green beans.
Preheat the oven to 200°C.
Put the chicken, 2 tablespoons of olive oil, thyme and garlic into a bowl and mix well so the chicken is coated. Cover and reserve.
Toss together the tomato salsa ingredients, two tablespoons of olive oil and a large pinch of salt.
Season to taste. Reserve until ready to serve.
Drain the bulgar, place in a dry bowl and add 1 tablespoon of olive oil and the paprika. Mix well and season to taste.
Heat a frying pan over medium heat and brown the chicken on both sides. Place in the oven for 15mins or until cooked through.
Plate the chicken and bulgar and top with the tomato salsa. Serve the beans on the side.
2 Chicken breasts
150 grams Bulgar wheat, soaked in boiling water for 30 mins
3 grams Farro sweet paprika
150 grams Green beans, stalk ends cut off
5 tablespoons Olive
Salt and pepper
For the marinade
4 grams Fresh thyme, picked
2 Garlic cloves, peeled and crushed
For the tomato salsa
1 pack Tomato Medley, halved
1 pack Spring onion, thinly sliced
1 tablespoon White wine vinegar
