This is an easy and delicious no-bake addition to any cheese dessert platter. Fool your guests with this dark chocolate “salami” that holds within some beautifully decadent flavours. For an adults only version, add a splash of your favourite liqueur.
250g dark chocolate
185g Ginger Cookies
100g butter, at room temperature
150g caster sugar
3 eggs
2 Tbsp brandy or amaretto (optional)
1/4 cup cocoa
1 cup roughly chopped mixed nuts (hazelnuts, pistachios, almonds)
1 cup roughly chopped dried fruit (figs, apricots)
Heat chocolate in the microwave or over a double-boiler until melted (if using a microwave, melt it in bursts, stirring between each burst). Once melted and smooth, set aside
Place ginger cookies inside a large paper bag and bash with a rolling pin until you have small pieces (you want to see them in the salami so you don’t want them too small)
Beat butter and caster sugar together until light and creamy. Beat in eggs, one at a time, then beat in brandy (optional, and you can use whatever liqueur you prefer)
Sift cocoa into the melted chocolate, stir to combine and add to the butter mix. Beat until smooth then stir in nuts, fruit, and ginger cookies
Cool mixture in the fridge for about 15-20 mins, then divide into two equal quantities. Place each on a long piece of cling film and roughly shape the mix into long logs, with your hands. Wrap the logs in the cling film and roll back and forth until you get 2 smooth cylindrical salami shapes
Put in the fridge until firm, then dust with icing sugar and tie with string to create the tied salami effect
