Courgette and Halloumi Bake

An easy and delicious summer lunch or dinner dish.

Ingredients

4 courgettes, coarsely grated

200 grams Halloumi coarsely grated

5 free-range eggs, beaten

big handful Parsley leaves, finely chopped

big handful Mint, finely chopped

big handful fresh dill, finely chopped

Method

Preheat oven to 180C

Mix all the ingredients together well in a bowl

Grease a high sided oven proof fry pan with approximately 1 tablespoon of cooking oil before placing it on a high heat

Pour in the egg courgette mix and cook until you can see it setting at the side

Transfer to the oven and cook for 15-20 minutes or golden brown

Allow to rest for 10 minutes before slicing. Serve straight out of the fry pan with lemon wedges and salad
