Courgette, chilli and smoked mussel linguine
Let the bold flavours combine in this delicious Italian dish
1 packet Dried linguine
1 punnet Smoked mussels
3 Courgette, peeled into long, thin ribbons using a potato peeler
2 grams Dried chilli flakes
1 packet Rocket
Salt and pepper
Extra virgin olive oil
Bring a large pot of salted water to the boil and cook the linguine for 8-10 mins or until al dente.
While the pasta is cooking, halve the mussels lengthwise retaining all oil from the packet.
Drain the pasta well and return to the pot. Add the courgette, chilli flakes, mussels and reserved oil, salt and pepper. Mix well, adding extra virgin olive oil as needed. Add the rocket, gently mix through and serve immediately.
