Fresh and packed full of good stuff, this vibrant dip gets rid of any excess mint and is sure to impress your guests.
1 cup frozen peas, thawed
2 Tbsp fresh mint, chopped
1/2 cup canned or cooked white beans, drained and rinsed
1/4 cup extra virgin olive oil
Juice of 1/2 a lemon
Pinch of flaky sea salt
Blitz all the ingredients together in a food processor or blender until you meet your desired consistency.
Serve on crackers or toasted bread.
Tip: If you don't have a food processor or blender, you could place the ingredients in a bowl and mash with a potato masher.
