A rich and satisfying side dish, a little goes a long way.
Heat the oven to 180°C. Grease a gratin dish with butter.
Thinly slice the potatoes (a mandoline is helpful here), put into a bowl with the remaining ingredients, reserving half the parmesan for the topping and season generously. Gather up the potato slices into handfuls and stand upright in the gratin dish. Scatter over the remaining parmesan. Bake for 70-90 mins or until golden and bubbling.
