Honeydew and Burrata Salad

Pretty pale greens and bright, vibrant flavours give this quick-to-prepare salad a real wow factor.

Ingredients

Grated zest and juice of ½ lemon

3 Tbsp extra virgin olive oil

3 telegraph cucumbers

1 avocado

½ honeydew melon

A handful of mint and basil leaves, shredded

1 burrata

Method

Combine the lemon zest, lemon juice, and olive oil in a small bowl. Whisk together, adding salt and pepper to taste, then set aside. Use a peeler or mandolin to thinly slice the cucumber.

Quarter, stone, and slice the avocado. Remove the seeds and skin of the melon and cut it into small slices.

To serve, place the cucumber, avocado, and melon into a large bowl and gently toss with the dressing and herbs, then transfer to a platter.

Rip open and break up the burrata, scattering the pieces over the salad.
