Hot Smoked Salmon Salad with Heirloom Tomatoes and Stracciatella

An ultra simple and incredibly beautiful salad that comes together in no time flat.

Ingredients

Zest of 1 lemon and 2 Tbsp juice

2 tsp white miso

1 tsp maple syrup

3 Tbsp extra virgin olive oil

3 radishes

400g heirloom tomatoes, sliced

1 tub stracciatella cheese

1 packet Aoraki BBQ and Horopito hot smoked salmon

Fresh dill, basil, or chives to garnish

Method

To make the dressing, whisk the lemon zest and juice together with the miso, maple syrup, and olive oil. Season with salt and pepper

Very thinly slice the radishes, and if they come with their leaves, finely shred these. Toss the radishes and leaves in a small amount of dressing

Scatter the stracciatella over a platter, then top it with the tomatoes and radishes. Drizzle with more dressing

Break up the salmon into chunks and arrange it on top of the vegetables. Scatter over the chopped herbs to finish
