ITALIAN SAUSAGE, MOZZARELLA AND ROCKET PIZZA
Quick but full of flavour, this weeknight winner is made with Farro's easy to use frozen pizza dough. Have the night off and get the kids to whip us this popular family favourite.
Preheat the oven to 220C.
Place the olive oil in a small pot over medium heat. Add the garlic and chilli ﬂakes and gently cook for 1 minute, then add the tinned tomatoes. Season with salt and freshly ground black pepper and cook for 10 minutes.
Place two heavy-based oven trays in oven.
Roll out your defrosted pizza bases. Spread each pizza base with half of the tomato mixture and scatter over the sliced mozzarella. Add the sausage meat, rolled (or squeezed out of the sausage casing) into medium size meatballs. Transfer to the preheated oven trays and cook until golden and crisp (12-15 minutes).
Serve drizzled with olive oil, sprinkled with sea salt, fresh black pepper and rocket.
100ml olive oil
2 Garlic Cloves sliced
Large pinch of salt
1 can Metelliana cherry tomatoes
400g good quality sausage meat or sausages
200g mozzarella, sliced
1 pack fresh rocket
2 balls of Farro Pizza Dough, defrosted
