Stone fruit is abundant at the moment and this simple dessert caramelises the fruit to bring out it’s soft, sweet and utterly delicious texture. You can serve it with greek yoghurt or for a bit of decadence, some Kohu Road ice cream. We love using Dulce sugar as it's unrefined and has a lovely honey, caramel flavour.
8 Plums
4 Peaches
4 Nectarines
½ cup brown sugar
1 small bottle Kombucha
Serving Suggestion: Serve with Kohu Road Vanilla Ice cream
Heat oven to 180°C
Cut the stone fruit in half and remove the stones
Place 1 cup of kombucha in a bowl
Place brown sugar in another bowl
Dip each piece of fruit first in the kombucha and then into the brown sugar and then place on a lined baking tray. You can add the remaining kombucha to the tray to help keep the fruit moist while cooking
Place in the oven and roast until soft and caramelised approximately 30 minutes. Baste the fruit with the cooking juices during cooking
Serve warm with Kohu Road Vanilla Ice cream or whipped cream
