Lebanese Falafel Bowls

We love having Kohkoz’s moreish falafel on hand for easy, satisfying meals. They’re delicious popped into a fresh pita, or try whipping up these vegetarian bowls with fruity couscous and fresh herbs.

Ingredients

550g packet Kohkoz Golden Falafel Bites

1 packet Alexandra’s apricot and currant couscous

1 tub Kohkoz traditional hummus

250g coloured cherry tomatoes

1 large bunch Italian parsley

Fresh lemon wedges to serve

Method

Follow the packet instructions to cook your falafel and couscous – both should take 15 minutes. Meanwhile, rinse the cherry tomatoes and use a serrated knife to cut them into quarters. Rinse and roughly chop the parsley.

Once the couscous and falafel have cooked, place the drained couscous in a large bowl and toss through the chopped tomatoes and parsley. You could also add fresh baby spinach, or any other salad favourites at this point.

Divide the couscous into individual bowls and top each with a generous handful of falafel bites. Finish with a dollop of the hummus and a squeeze of fresh lemon.
