Lime and Jalapeño Popsicles

For fresh and easy flavour, citrusy sodas make a great base for popsicles. In this grown-up version we’ve paired a splash of vodka with the spicy, tangy lime and jalapeño soda from Strangelove.

Ingredients

100g caster sugar

2 bottles (600ml) Strangelove lime and jalapeño soda

100ml lime juice

50ml vodka or gin (optional)

Lime slices 

Popsicle moulds and ice cream sticks

Method

Put the sugar into a small saucepan with 100ml water and heat gently until the sugar has dissolved. Set aside to cool.

Combine the sugar syrup with the soda, lime juice, and vodka (if using). Divide the mix between the popsicle moulds, leaving a ½ cm gap at the top to allow for expansion.

Freeze for 45 minutes until semi-frozen, then add the lime slices, pushing them about halfway down.

Push the ice cream sticks into place. Return to the freezer overnight.

To easily remove the popsicles from the moulds, run the outside of the mould under warm water to loosen.
