MACAROON & BANANA SOFT SERVE SUNDAE

This dessert has it all! Quick and easy to whip up, made with simple wholefood ingredients, and most importantly it's incredibly delicious. All you need is a blender, and a few simple ingredients. If you want to make it a little more decadent, you can also whip-up our simple home-made chocolate sauce - making it the ultimate guilt-free indulgence.

Ingredients

For the banana soft serve:

2 bananas (chopped into 3cm pieces and frozen overnight)

¼ cup organic coconut yoghurt (Coyo or Raglan)

Splash vanilla extract

Finishing ingredients:

1-2 Little Bird Organics cacao macaroons, chopped

½ large banana, sliced lengthways

1 teaspoon chocolate sauce (optional)

1 tablespoon crushed activated almonds for a little extra crunch (optional)

For the chocolate sauce: (optional)

This makes around ½ to 2 cups or chocolate sauce. It will keep in the fridge for months and can be taken out and warmed when you want to use it.

1 cup organic cacao powder

1 cup organic maple syrup or other liquid sweeter (coconut nectar or raw agave)

1 tsp vanilla extract

3 tablespoons melted cold pressed coconut oil

Method

Place all the soft serve ingredients in a blender and blend using your tamper if you have one until it reaches a soft serve consistency – you want to only blend until it just starts to get smooth as it will soften and melt quickly.

Place the sliced banana in a sundae glass, followed by a half the macaroon pieces. Spoon in your banana soft serve, and top with the remaining macaroons, activated almonds and a drizzle of chocolate sauce (if using).

For the chocolate sauce:

Blend the cacao powder, maple syrup, and vanilla in a high-speed blender, blending until smooth. Add the coconut oil while the blender is still running, blending until incorporated
