Mango and Coconut Kulfi

Kulfi is an Indian ice cream traditionally made with reduced milk. This cheat’s version is super-fast to prepare and just needs to freeze overnight. Simple, fun, and delicious!

Ingredients

2 cans tinned mangoes

A pinch of saffron (optional)

¼ cup coconut milk powder

1 tsp ground cardamom

½ cup sweetened condensed milk

½ cup double cream

1 Tbsp lime juice

¼ cup pistachios, finely chopped

Method

Drain the mangoes and put into a blender with the all the remaining ingredients, except the pistachios. Blend until very smooth.

Spoon into dariole or ice cream moulds and scatter over the pistachios. Cover the tops with foil, then insert an ice cream stick through the foil into the kulfi and freeze overnight. Run under warm water to loosen kulfi from the moulds.
