MARINATED GOUDA, APPLE, AND WALNUT SALAD

While we love gouda just as it is, it’s even more spectacular when you add a fragrant marinade. Here it’s infused with orange and thyme, then tossed with peppery greens, crunchy nuts, and apples.

Ingredients

¼ cup olive oil

1 orange

¼ tsp lightly crushed Farro black peppercorns

1 sprig of thyme

150g gouda, broken into chunks

1 tsp Dijon mustard

1-2 apples, cored and cut into slices

1 bag watercress

¼ cup walnuts, toasted

Method

Zest the orange and add to a saucepan with the olive oil, peppercorns, and thyme. Warm gently for 5 minutes until fragrant, then set aside to cool. Marinate the cheese in the oil for at least an hour, or overnight in the fridge. Bring up to room temperature before using.

To serve, drain the cheese, taking care to reserve the marinading oil. Combine 2 tablespoons of the marinading oil with the Dijon mustard and 2 tablespoons of juice from the orange to make a dressing. Toss the dressing together with the cheese, apple, watercress, and walnuts and transfer to a serving dish.
