Method

Break up the meringues into chunky pieces and arrange into a circular wreath shape on a round platter. An easy way to do this is to put a small upside down bowl or cup in the centre of the platter to help make a perfect wreath shape and lay the meringues around it.

Loosely whip the cream. Then top the meringue wreath with dollops of the whipped cream and sprinkle with freeze-dried raspberries and smaller pieces of meringue.

28 meringues, broken into pieces

400ml cream 

Freeze-dried raspberries
