Here is a few of my favourite things to put onto a summer platter. All the ingredients can be purchased in stores or online at Farro. Farro have a huge selection of beautiful seasonal fruit and vegetables and the best items to add to your platters, sourced from around New Zealand and off shore.
1 large avocado
1 lime
Bag of corn chips
Roasted capsicum
Fillet of hot smoked salmon
Large wedge of French Delice De Bourgogne cheese
Roasted garlic and white bean hummus
Jar Green olives
6 Snacking cucumbers
Bunch of radishes
Punnet strawberries
Dice the avocado, and squeeze the lime juice over the top. Season with salt and pepper. Drizzle the chilli peanut oil over the top. Garnish with chives. Set aside.
Spoon some labneh onto 10 focaccia crisps, top with a roasted capsicum tapenade, then a piece of prosciutto, capsicum and anchovy. Garnish with chives.
Place the salmon onto a board, put a large spoonful of labneh next to it and a pile of capers on top.
Arrange the cucumber sticks, radishes, olives, cheese, pickles and strawberries onto a platter.
