Mozzarella, Olive and Sundried Tomato Salad

This fresh salad combines all things good about Italian food - perfect to go on your antipasto platter or as a side salad!

Ingredients

2 Balls Mozzarella, drained, torn into chunks

60g Pitted Kalamata Olives, drained

60g Pitted Green Olives, drained

60g Farro Sundried Tomatoes, drained

5g Fresh Basil, leaves picked, roughly torn

1-2 tablespoons olive oil to drizzle over

Method

Drain the mozzarella and tear it into chunks. Slice the sundried tomatoes and halve the olives.

In a serving bowl, toss all of the ingredients together, seasoning to taste as you go. Finish with a drizzle of olive oil and serve with plenty of crusty bread.
