Perfect for entertaining, these simple mushroom tartlets are quick to make and cook. The mix can be made ahead, ready to pop into the oven at party time!
50g butter
500g brown mushrooms, chopped
2 cloves garlic, finely chopped
A good pinch Farro chilli flakes
Zest and juice of 1 lemon
½ cup mascarpone
2 Tbsp parsley, finely chopped
2 packets Timos filo-ette cases
Place a frying pan over a medium heat. Add the butter and mushrooms and fry until golden. Next, add the garlic, chilli, and lemon zest and fry for a further minute. Stir through the mascarpone, lemon juice, and parsley, and season to taste with salt and pepper. Allow to cool before using.
To bake, preheat the oven to 180°C. Spoon the cooled filling into the filo cases and arrange them on a baking tray. Bake for 15 minutes, or until heated through. Cool slightly before serving.
