PEANUT, MANGO AND CABBAGE SALAD

An easy crowd pleaser, top with some grilled salmon or meat to complete this meal.

Ingredients

For the salad:

1 cup peanuts toasted, reserve 2 tablespoons for garnish

1 ripe mango peeled and roughly chopped

1/2 Savoy Cabbage finely sliced on a mandolin

1/2 cup Fresh coriander leaves loosely packed

1 bunch small radishes sliced thinly

For the dressing:

1/2 cup white vinegar

1/4 cup Hinode mirin

2 tablespoons Megachef fish sauce

1 Garlic Clove peeled and grated

1 Red Chilli very finely sliced

Method

Make the dressing by combining all dressing ingredients together in a jar with a tight fitting lid and shaking well to combine.

Combine all the salad ingredients together well in a large bowl and pour over the dressing.

Mix well before serving on a large platter, garnish with remaining peanuts
