Perfect Boiled Eggs with Dipping Salts

6 Size 7 eggs, room temperature

Method

Bring a pan of water to the boil and season with salt. Using a ladle, dip the eggs momentarily into the water, then gently lower them in completely. Cook for 6 minutes for a slightly jammy egg, or 8 for a hard-boiled egg.

Plunge the eggs into iced water to cool. Gently tap each egg on the bench to crack the shell, then peel under the water. Cut into halves or quarters and arrange on a platter, along with small ramekins of salts alongside for dipping.
