Pork Tortilla Wraps

A fun and easy meal that can include any toppings you like!

Ingredients

2 Freedom Farms Pork loin fillets, fat and sinew removed

Lettuce, washed and picked

1 packet Farrah Original wraps (8 pack)

30 mls Olive oil

Salt and Pepper

For the marinade

35 mls Worcestershire sauce

35 grams Brown sugar

30 grams Tomato paste

2 grams Farro chilli flakes

For the salsa

1 Red onion, peeled and thinly diced

1/2 bunch of Coriander, washed and roughly chopped

1 pack Campari tomatoes, washed and roughly chopped

Juice of 1 Lime

400 gram tin Black beans, washed and drained

For the Smashed Avocado

1/2 bunch Coriander, roughly chopped

2 Avocados, smashed with a fork

Juice of 1 Lime

Method

Preheat the oven to 200°C

Put the marinade ingredients in a bowl along with the Pork fillets and mix well. Marinade for at least20 mins

While the pork is marinating, combine all salsa ingredients in a small bowl and season to yourtaste. Cover and rest until ready to serve

Place the pork fillet in a medium sized roasting dish along with marinade

Cook for 25 mins or until the pork is cooked through. Turn several times while cooking

Remove from the oven and rest for 5 mins and then slice on the diagonal

While the pork is resting, combine all Smashed Avocado ingredients in a small bowl and season toyour taste

Heat the wraps in a pan over a medium heat until puffed and blistered

Spread each wrap with smashed avocado, then layer lettuce and pork and top with salsa
