POTATO SALAD WITH CRUMBLED SALAMI AND SMOKED PAPRIKA DRESSING

Everyone loves a potato salad, and this one hits all the right notes, especially with the crispy little nuggets of fried Hungarian Artisan salami.

Ingredients

750g new potatoes, halved if large

1 Hungarian Artisan Co. salami (we used mild paprika), diced

1 small shallot, finely minced

2 Tbsp red wine vinegar

3 Tbsp olive oil

1 tsp honey

1 tsp Dijon mustard

1 tsp sweet smoked paprika

2 Tbsp finely chopped parsley

Method

Put the potatoes in a pan of cold, salted water and bring to simmer. Cook for 15-20 minutes until tender. Drain well.

While the potatoes cook, fry the salami in a frying pan until crisp and set aside.

In a small jar, mix together the shallot, vinegar, olive oil, honey, mustard, and sweet paprika for the dressing.

Combine the drained, but still warm, potatoes with the dressing. Toss through the parsley and put into a serving bowl. Scatter with the fried salami to serve.
