PULLED PORK BURGERS WITH BALSAMIC APPLE SAUCE

This is one of the tastiest and easiest gourmet at-home burgers around! The sweet, zingy apple chutney style sauce matches perfectly with succulent pulled pork and creamy crunchy slaw, all stacked inside a fresh baked bun — sensational.

Ingredients

For the sauce:

3 onions, peeled and finely sliced

2 green apples, grated

1/3 cup brown sugar

1/4 cup balsamic vinegar

1/2 cup apple juice

1/4 cup apple cider

salt and pepper

For the slaw:

3 tablespoons mayonnaise

2-3 cups red and green cabbage, finely sliced

For the burgers:

6 burger buns

Method

Cook the pork shoulder as per packet instructions

To make the sauce:

In a heavy-based pan, sauté sliced onions until they are translucent and softened. Add grated apples, stir to combine & cook for a further minute. Next add brown sugar, balsamic vinegar, apple juice & apple cider. Stir to combine and simmer for 10–15mins until the liquids have reduced and the sauce has become thicker & slightly sticky. Season to taste with salt & pepper. Transfer to a bowl or jar to cool

To assemble the burgers:

In a bowl, stir a few tablespoons of mayonnaise through the finely sliced red & green cabbage to make a slaw

If preferred, split your burger buns and grill cut sides until slightly toasted. Top your bun base with a generous dollop of the apple sauce. Next add the pork and top this with some slaw. Add the top of your bun, gently press down with the palm of your hand & devour immediately
