Rhubarb Gin and Tonic
This beautifully mild, simple rhubarb syrup looks so pretty and transports your G & T's to another realm.
Place chopped rhubarb, sugar and water in a small saucepan over medium heat.
Bring to a boil, then reduce heat and simmer for 15 minutes. Remove from heat.
and cool. Strain syrup and refrigerate until needed.
Divide ice, gin and lime juice between two glasses. Add rhubarb syrup to taste and top with chilled East Imperial Tonic Water.
Garnish with lime slices and extra rhubarb stalks.
1 Cup rhubarb, chopped, plus 2 long stalks to garnish
1/4 Cup sugar
1/2 Cup water
1/2 cup gin (or non-alcoholic spirits)
Juice of 1 lime + 1 lime sliced for garnish
2 x 150ml bottles East Imperial Tonic Water
