ROASTED BABY VEGETABLES WITH THYME AND HONEY CITRUS GLAZE
This delicious dish makes an easy and beautiful side on any table
Preheat the oven to 180°C.
Put the vegetables in a roasting dish and toss with the olive oil and thyme. Season generously with salt and pepper.
Roast for 30-35 mins until the vegetables are tender.
While the vegetables are roasting, put the honey into a small pan with the orange zest and juice and reduce by half. Toss the vegetables with the dressing and serve.
1kg baby vegetables, scrubbed
2 tablespoons olive oil
2 sprigs of thyme
2 tablespoons J. Friend Beechwood honey
1 orange, grated zest and juice
