This dish is best way to convert a Brussels sprout skeptic, they get beautifully caramelised in the oven, and the smoky chorizo adds so much flavour. Best of all, it’s ultra simple to prepare and comes together in less than 20 minutes.
100g sliced chorizo
1 sliced onion
1 teaspoon sweet smoked paprika
400g halved Brussel sprouts
Fry sliced chorizo in an ovenproof frying pan, add sliced onion and cook for a few minutes
Add sweet smoked paprika, stir to combine then add halved Brussel sprouts and season generously. Pan fry for a few minutes to coat well then put into a hot oven for 10 minutes or until the Brussel sprouts are tender
