ROASTED KŪMARA WITH HONEYED HOT SAUCE BUTTER

For an easy, tasty side dish that pairs well with all sorts of mains, try this sweet roasted kūmara with a velvety honeyed glaze, spiked with your favourite hot sauce.

Ingredients

4 medium orange kūmara

50g butter, melted

1-2 tsp hot sauce

1 tsp runny honey

2 cloves garlic, finely chopped

2 tsp thyme leaves, finely chopped

2 tsp red wine vinegar

A pinch of chilli flakes

Method

Preheat the oven to 180°C.

Halve the kūmara lengthwise and score a cross-hatch pattern into the cut sides. Put onto a baking paper-lined oven tray.

In a small bowl, combine the butter, hot sauce, honey, garlic, thyme, and vinegar and brush over the cut halves of the kūmara. Season with salt and pepper and sprinkle with chilli flakes.

Bake for 35-40 minutes, or until the kūmara is tender.
