Rocket and Coppa Bruschetta
Simply toast and top with fresh ingredients for a perfect appetizer.
To Prepare Shallots:
Thinly slice shallots, then place in a shallow bowl with olive oil, white wine vinegar and salt and pepper. Leave to marinate.
Slice bread into how many slices you need, then toast.
Generously spread artichoke tapenade on one side, then layer with rocket, coppa, marinated shallots, and a drizzle of balsamic glaze.
