White wine vinegar

To Prepare Shallots:
Thinly slice shallots, then place in a shallow bowl with olive oil, white wine vinegar and salt and pepper. Leave to marinate
To Assemble:
Slice bread into how many slices you need, then toast
Generously spread artichoke tapenade on one side, then layer with rocket, coppa, marinated shallots, and a drizzle of balsamic glaze
