Six Barrel Grapefruit Gin Fizz
This festive cocktail is bubbly, slightly tart, yet sweet and refreshing.
Shake together the grapefruit syrup, gin, egg white, basil and ice until frothy.
Strain into 2 glasses filled with extra ice, and top up with a little sparkling water.
Garnish with extra Thai basil leaves and pomegranate seeds and serve.
60ml Six Barrel Grapefruit Soda syrup
120ml good quality gin (or Seedlip Grove 42 for an alcohol-free version)
1 egg white
handful Thai basil leaves
½ cup ice
½ cup Antipodes sparkling water
2 Tbsp pomegranate seeds
