This festive cocktail is bubbly, slightly tart, yet sweet and refreshing.
60ml Six Barrel Grapefruit Soda syrup
120ml good quality gin (or Seedlip Grove 42 for an alcohol-free version)
1 egg white
handful Thai basil leaves
½ cup ice
½ cup Antipodes sparkling water
2 Tbsp pomegranate seeds
Shake together the grapefruit syrup, gin, egg white, basil and ice until frothy
Strain into 2 glasses filled with extra ice, and top up with a little sparkling water
Garnish with extra Thai basil leaves and pomegranate seeds and serve
