This delicious slow cook is something everyone can appreciate. The chicken meat just falls off the bone and with chorizo added there is so much texture!
1 Red Onion peeled and sliced
2 cloves of garlic, peeled and crushed
1 Carrot peeled and diced
1 stick Celery diced
1 pack chorizo sausage sliced
1 pack Bostock chicken drumsticks
1 tablespoon Smoked Paprika
1 tin chickpeas rinsed well
1 bunch Italian parsley, chopped well
Preheat oven to 180C
In a deep fry pan heat a little oil and brown the onions
Add the chopped carrot, celery and chorizo and brown well
Add the chicken drums and brown on all sides
Add the paprika and 2 cups of water, mixing well, and finally the chickpeas. Bring to a boil. Transfer to a casserole dish, cover and place in a preheated oven for 35 minutes
Remove the lid and allow the juices to reduce before serving
Sprinkle over the freshly chopped Italian parsley and serve immediately
