Smoked Salmon and Potato Gnocchi

A delightful combination of smoked salmon pieces, beans, capers and cherry tomatoes with soft gnocchi.

Ingredients

500 grams Gnocchi

100 grams Green beans, stalks removed, beans halved

200 grams Hot smoked salmon fillet, broken into pieces

1 Lemon, zest and juice

15 grams Capers

100 grams Cherry tomatoes, halved

35 grams Rocket leaves, washed and drained

10 grams Chives, sliced into 3 cm pieces

2 tablespoons Olive oil

Salt and pepper, to taste

Method

Bring a large saucepan of well salted water to the boil and add the gnocchi.

Boil until they float to the top and taste (there should be no uncooked flavour of flour). Drain and place in a large warm bowl.

Boil the beans in a separate saucepan of salted water for 4 mins then drain and add to the gnocchi.

Add the remaining ingredients, mix well, taste and season with salt and pepper to serve.
