Soy and Sesame Glazed Salmon

This Asian-inspired glaze is simple to prepare and gives a lovely colour.

Ingredients

2 Tbsp sea salt

1 Mt Cook Alpine salmon, skin on

2 Tbsp soy sauce

1 Tbsp maple syrup

1 tsp sesame oil

1 Tbsp mixed sesame seeds

1 spring onion, sliced

1 red chilli, finely chopped

lime wedges for serving

Method

Sprinkle the salmon with sea salt and leave for 30 mins in the fridge. Remove excess moisture from the salmon with paper towels. Lay the salmon, skin side down on a baking paper lined roasting tray.

Combine the soy sauce, maple syrup and sesame oil and brush over the salmon. Scatter with the sesame seeds

Preheat the oven 200°C. Bake the salmon for 15-20 mins depending on how well-cooked you prefer it to be.

Carefully transfer to a serving platter, scatter with the spring onion and red chilli. Serve with the salad and lime wedges alongside
