800g pumpkin, seeded and cut into wedges
2 Tbsp olive oil
1 tsp smoked paprika
¼ tsp chilli flakes
½ tsp ground coriander
A handful of thyme sprigs
Preheat the oven to 180 degrees.
Toss the pumpkin with the oil and spices and put onto a baking paper-lined tray. Season with salt and pepper and roast for 30-35 minutes, or until tender.
