Sticky Date Truffles

Festive and decadent, these sneaky cake pop-style truffles are the ultimate gifting hack! Filled with our sticky date pudding, they’re so speedy to prepare, ready to be wrapped up for last minute gifts, or brought along to a Christmas party.

Ingredients

1 Farro Kitchen sticky date pudding

2 Tbsp brandy, rum, or other favourite alcohol (optional)

½ cup ground almonds

450g milk, white or dark chocolate, roughly chopped

Method

Put the sticky date pudding in a food processor and blend to a fine crumb. Add the brandy, if using, and the almond flour.

Take roughly 2 teaspoon-sized scoops of the cake mix and roll into balls (using slightly damp hands makes this easier). Put onto a baking paper-lined tray and transfer to the fridge to set for at least 30 minutes.

Melt the chocolate either in a microwave-proof bowl in the microwave in short 20 second bursts, or in a heatproof bowl over a saucepan of just-simmering water. Using a fork (or, if you prefer, a skewer or chocolate swirler), swirl each truffle in the chocolate until it’s covered. Lift up to allow the excess chocolate to drain off, then put onto a baking paper-lined tray to set.

To package up, place the truffles in small paper cases and put into a gift box, or pop them into a cellophane bag and tie with a ribbon. If you want to keep them for more than 1-2 days, store them in an airtight container in the fridge.
