This quick-to-cook side is big on flavour and a great way to showcase all sorts of exotic mushroom varieties, although it would be just as delicious with classic button mushrooms.
2 Tbsp oil
2 spring onions, cut into 5cm lengths
300g mushrooms, such as shiitake or oyster, sliced
2 cloves garlic, finely sliced
3cm piece ginger, julienned
3 bok choy, cut lengthwise into wedges
1 tsp sesame oil
2 tsp soy sauce
1 Tbsp hoisin sauce
1 Tbsp toasted sesame seeds
Heat the oil in a large frying pan or wok and add the spring onions and mushrooms, stirring until cooked through
Add the garlic and ginger and cook for one minute, then add the bok choy and cook for a further 1-2 minutes
Add a splash of water to the pan, cover, and cook for 1-2 minutes until just tender
Toss through the sesame oil, soy and hoisin sauce
To serve, transfer onto a warmed platter and scatter over the sesame seeds
