Stir-fried Bok Choy with Mushrooms
This quick-to-cook side is big on flavour and a great way to showcase all sorts of exotic mushroom varieties, although it would be just as delicious with classic button mushrooms.
Heat the oil in a large frying pan or wok and add the spring onions and mushrooms, stirring until cooked through.
Add the garlic and ginger and cook for one minute, then add the bok choy and cook for a further 1-2 minutes.
Add a splash of water to the pan, cover, and cook for 1-2 minutes until just tender.
Toss through the sesame oil, soy and hoisin sauce.
To serve, transfer onto a warmed platter and scatter over the sesame seeds.
