Summer Tomato Salad with Burrata

Tomatoes and burrata are a match made in heaven, and this quick and simple salad showcases the best of the season! Serve as a side or a snack with some good bread to soak up all the tomato juices and creamy burrata.

Ingredients

1 punnet cherry tomatoes


2-3 truss tomatoes


1 large ball burrata 


2-3 Tbsp olive oil


A small handful of fresh dill, to serve

Method

Slice the cherry tomatoes in half and the truss tomatoes into wedges. Add the sliced tomatoes to a bowl and drizzle over the olive oil. Season with plenty of salt and pepper and gently toss to combine.

Tip your dressed tomatoes onto a serving platter. Drain the burrata from its brine and gently break it open (you will want to do this over the salad or over a small dish to make sure you don't lose any of the creamy filling).

Tear the burrata into threads and drape them over the salad.

Top with sprigs of fresh dill and serve immediately. Perfect with grilled meats and crusty bread.
