Famous for her delicious, unfussy, modern food, Miss Polly delivers again with this easy favourite. Topped with sticky wings sauce and fresh, summery salsa, these tasty meatballs are the best crowd-pleaser.
For the Meatballs:
900g chicken mince
3 spring onions, finely diced
2 Tbsp Four Saucemen Chicken rub or Jalapeño and Sweet Orange Rub
1 Tbsp smoked paprika
1 Tbsp garlic powder
1 cup grated parmesan
1 cup Italian parsley, chopped
1 egg
1/2 cup panko crumbs
½ cup of Four Saucemen Wing Sauce, plus extra to serve
For the Salsa:
2 cups corn, defrosted
2 avocados, diced
1 punnet cherry tomatoes
Juice of one lemon
1 cup coriander, finely chopped
1/2 small red onion, finely diced
1 Tbsp extra virgin olive oil
Salt and pepper
To Serve:
Sliced gherkins
Mayonnaise
Mini tortillas
Preheat the oven to 180°C.
Mix all of the meatball ingredients together in a large bowl and roll the mixture into 16 balls. Brown the balls in two batches in a pan with oil, then place onto a baking tray. Drizzle roughly ½ of wing sauce over the balls. Transfer to the oven and bake for 10-12 minutes.
Whilst the meatballs are baking, mix together the salsa ingredients and set aside in a serving bowl.
Heat the mini tortillas on both sides over a gas flame or in a pan, then place onto a serving platter.
Place the cooked meatballs onto a serving platter and let your guests help themselves!
