TEX-MEX STYLE BUTTERFLIED CHICKEN
A super easy and impressive meal to share with friends and family. This can be cooked in the oven or on the barbie, depending on the weather. Try it with DIY tacos or can be served with your favourite salad and bread for a summer spread. You’ll all be going back for more!
Pre-heat the oven to 180℃ degrees.
Mix olive oil and lime juice and rub onto the chicken. Sprinkle the fajita mix over the chicken and then rub it in. Leave to marinate in the fridge for about 20 mins (or overnight in the fridge, if you have time).
Place the chicken skin side up in a lined oven dish. Place lime halves beside the chicken and cook for 30-35 mins until juices run clear.
Either place on a platter with tortillas, a bowl of sour cream, torn lettuce, tomatoes and your favourite guacamole and let everyone help themselves!
Serve with your favourite BBQ salads and hot crusty garlic bread.
1 Bostock butterflied chicken
1/2 pack Culley’s Fajita mix
2 tablespoons olive oil
Juice of 1 lime
Salt and pepper
Plus 2 extra limes cut in half
