Thyme Grilled Potatoes

These simple grilled potatoes are great for a barbecue - feel free to change the herbs to suit what else you are cooking; any hard herbs such as oregano, rosemary and sage also work well here.

Ingredients

1.2kg potatoes, scrubbed

4 cloves garlic

1 Tbsp finely chopped thyme leaves

3 Tbsp olive oil

Method

Cut the potatoes into 1cm slices and put into a saucepan with cold salted water. Bring to a boil, then simmer for 5 mins or until just tender

Drain then brush the slices with 1 Tbsp olive oil. Set aside

Mash the garlic with a little sea salt to a paste then combine with thyme leaves and 2 Tbsp olive oil

Brush one side of the potatoes and put onto the grill of a barbecue oiled side down for 5 mins, brush the top side with the remaining thyme oil, flip over and grill for another 5 mins
